Turkey sausage breakfast patties

Start the day with this leaner version of a breakfast favorite. Use also as a filling for stuffed vegetables.

Makes 12 patties (2 patties per serving)
- ½ cup old-fashioned oats
- 2 egg whites
- 2 tablespoons maple syrup
- ½ teaspoon tabasco sauce
- 1 teaspoon salt
- ¾ teaspoon rubbed sage
- ¼ teaspoon nutmeg
- ¼ teaspoon ginger
- 1½ pounds ground turkey
- ½ Granny Smith apple, cored and shredded
- ½ cup finely chopped onion
- 3 tablespoon all-purpose flour
- Vegetable oil, for frying

Place oats in food processor and whirl until texture of coarse meal.

Stir together egg whites, maple syrup, tabasco, salt, sage, nutmeg and ginger in a large bowl.
Add turkey, apple, onion and oats.

Divide mixture into 12 equal portions and shape into patties.
Dredge lightly in flour.
Heat 1 teaspoon oil in large non-stick skillet.
Add patties; fry over medium-high heat for 6 minutes or until browned on both sides, turning over once.
Add more oil, as needed.
