Baked cod with herbed crumb topping

Mild cod fillets benefit from the flavorful rosemary and mustard seasoning im this dish. Try the same topping with other thick fish fillets, such as tilefish or grouper.

Nutrient value per serving: 184 calories, 26 gr protein, 5 gr fat, 7 gr carbohydrate, 246 mg sodium, 61 mg cholesterol.

Makes 4 servings.
- 1 tablespoon Dijon-style mustard
- 1 tablespoon lemon juice
- 4 cod fillets (about 5 to 6 ounces each)
- 1 cup fresh dry bread crumbs
- 2 tablespoons chopped parsley
- 1 tablespoon finely cut chives or green onion tops
- 1½ teaspoons chopped fresh rosemary or ½ teaspoon dried
- 1 tablespoon olive oil

Lightly grease baking dish.

Stir together mustard and ¼ teaspoon lemon juice in a small bowl.
Spread the mustard mixture over tops of fish fillets.

Mix together crumbs, parsley, chives, oil and remaining lemon juice in a small bowl.
Press mixture firmly into mustard-covered tops of fillets.
Transfer to prepared baking dish.

Bake in hot oven 400F for about 17 minutes or until top is lightly browned and fish is cooked through.
