Poached shrimps

6 servings

Simmer for about 5 minutes
-8 cups water
-¼ cup sliced onion
-1 clove garlic
-1 bay leaf
-2 celery ribs with leaves
-1 tablespoon salt

Wash, drain and add :
-2 lbs green shrimps

Slice and add :
-½ lemon

Simmer the shrimps for about 5 minutes or till pink. Drain immediately and chill. Serve very cold in their shells, to be shelled at the table, with a bowl of Remoulade sauce

Or shelled them, remove the intestinal vein and used them as desired.
